Asian Noodle Salad with King Prawns. 399 calories

- 60g King Prawns
- 1 nest Tesco fine egg noodles (183g when cooked)
- 40g carrot
- 20g red pepper
- 80g beansprouts
- 40g red cabbage
- 20g red onion
- 8 sprigs fresh coriander
- 2 sprigs fresh mint leaves (approx 12 leaves)
- 1 tbsp fish sauce
- 2 tbsps light soy sauce
- 1 tsp garlic puree
- 1 tsp Sriracha chilli sauce
Directions

Prepare the noodle nest as per instructions on packaging. When cooked removed from heat source and allow to cool.

Finely shred the red cabbage. Finely chop the red onion and red pepper.
3.
Roughly chop the fresh mint and coriander.
4.
Using a potato peeler slice the carrot into thin ribbons.
5.
Into a large bowl combine the prawns, red onion, red pepper, red cabbage, fresh mint, coriander, carrot, bean sprouts and cooled noodles.

Into a small bowl combine the fish sauce, light soy sauce, garlic puree and Sriracha chilli sauce.
7.
Dress and toss the salad with sauce coating evenly.
8.
Allow the salad to marinade in the fridge for 20 minutes prior to serving.
