- Chicken Breasts 180g
- 1 x Large flat mushroom 125g
- 2 x Laughing Cow blue cheese triangles
- Salt & pepper (seasoning)
Bistro Side Salad
- 3 Large lettuce leaves
- Cucumber 15g
- Tomatoes 60g
- Red Onion 20g
- Black olives 1 tbsps

Directions

Preheat oven to 180 degrees.

Butterfly chicken breast and season with salt and pepper.
3.
Prepare side salad by chopping and plating lettuce, cucumber, tomato, red onion and olives.

Remove stalk from mushroom. Lightly season with salt a pepper, load the mushroom with Laughing Cow blue cheese triangle. Bake for 10 - 12 minutes.
5.
Dry fry chicken breast in a non-stick pan on a high heat for 8 - 10 minutes or until cooked.
6.
Plate your chicken, mushroom and salad, serve with homemade Ranch Dressing.
