Ingredients

- 100g Crayfish Tails
- 170g King Prawn Tails
- 2 cups red cabbage
- 100g carrot
- 100g beansprouts
- 100g mango
- 1 fresh red chilli
- 18 sprigs of fresh coriander
- 5 sprigs of fresh mint
- 100g cucumber
Thai Satay Dressing
- 2 tsps garlic puree
- 2 tbsps light soy sauce
- 2 tbsps fish sauce
- 1 tbsp smooth peanut butter
- Juice of 1 lime
Garnish
- 1 tbsp raw peanuts
- 2 sprigs of fresh coriander
Directions

Dry fry the raw peanuts on a medium heat for 10 minutes. Remove from heat and crush.

To prepare the salad:
Ribbon the carrot and cucumber (I find a potato peeler the easiest way).

Finely shred the red cabbage.
4.
Thinly slice the mango, red chilli, coriander and mint.
5.
Combine the crayfish tails, carrot, cucumber, red cabbage, coriander, mint, red chili, mango and beansprouts into a large bowl.
6.
Thai Satay Dressing:
Into a small bowl at the garlic puree, soy sauce, fish sauce, peanut butter and lime juice. Blend until smooth.
7.
Toss the salad with the Thai Satay dressing. Serve with the Prawn tails and garnish with the crushed peanuts and coriander.
