  • 1 can Tesco Mixed Bean Salad
  • Tin of Chopped Tomatoes 
  • 2 Chicken Stock Cubes
  • 2 Cloves of Garlic 
  • 1/2 packet Old El Paso Taco Seasoning. (12g combined paprika, cumin, chilli, onion powder, garlic powder, salt and oregano.
  • 160g sweetcorn
  • 3 tbsps Half fat creme fresh
  •  Coriander (Garnish)

Directions

1.

Prepare the stock cubes with 1 1/2 pints of boiling water. 

2.

Into a pan add chicken stock, tin of tomatoes, mixed bean salad, sweetcorn and taco seasoning. 

3.

Gently simmer for 10 minutes. 

4.

Crush and add the garlic, simmer for a further 5 minutes.

5.

To serve portion the soup and garnish with fresh coriander leaves and 1 tbsp of creme fresh per portion.
