- 2 medium peppers (approx 200g each)
- Tinned Three Bean Salad (Tesco)
- 100g Tomato passata
- 15g Taco Seasoning (Tesco). Blend of: Chilli, Salt, Cumin, Onion granules, Garlic powder, Red Pepper powder, Paprika, Black Pepper, Oregano.
- 80g Sweetcorn
- 20g Red Onion
- Lime juice - 1/2 a lime
- Garlic puree 10g
Avo Smash (62 calories per serving)
- 1 medium avocado (approx 60g)
- 10g Coriander
- Lime juice - 1/4 lime
Salsa Fresca (15 calories per serving)
- 100g salad tomatoes
- 10g Coriander
- 10g Red onion
- Lime juice - 1/4 lime
Directions

Preheat oven to 180 degrees.

Place pan onto a medium heat. Add the (drained) bean salad, passata, taco seasoning, sweetcorn, red onion, lime juice and garlic puree. Gently simmer for 10 minutes.

Prepare the peppers by chopping into 2, 1/2 inch from the top creating a lid. Remove seeds to create a hollow.

Fill with mexican bean mix from pan. Replace the lid of the peppers and bake in preheated oven for 15 minutes.

Avo smash: Remove and discard the skin and stone from the avocado. Finely chop the coriander. Combine the avocado flesh, coriander and lime juice into a bowl. Roughly mash the ingredients together with the back of a fork.
6.
Salsa Fresca: Finely dice the tomatoes and red onion. Finely chop the coriander. Combine ingredients into a bowl with the lime juice.
