One of my favourites as it is tasty, quick and very easy to make. 

This recipe is ideal to help combat those takeaway cravings. 

Ingredients

Ingredients

  • Stir Fry Veg Medley (Tesco) 220g. includes mangetout, baby corn, broccoli, spring onion, red chilli.  
  • Cooked king prawns 170g 
  • Basmati rice 125g 
  • Beansprouts 200g

Sauce

  • 3 tbsp light soy sauce 
  • 1 tbsp fish sauce 
  • 1 tbsp freeze dried coriander leaf
  • 1 tsp garlic powder
  • 1 tsp onion granules 
  • Fresh coriander 15g 

Garnish

  • Raw peanuts
  • Fresh coriander
  • Red chilli

Directions

Boil the basmati rice as per manufacturer guidelines. (14 - 16 minutes)

Dry fry the peanuts on a medium heat until golden brown. 

Crush or finely chop as preparation for garnish.

Finely chop the corinder and combine with, light soy sauce, fish sauce, freeze dried coriander leaf, garlic powder and onion granules.

Add the following to a wok on a high heat 4 - 6 minutes.

  • Cooked rice
  • Stir Fry Veg Medley (reserve some red chilli to garnish)
  • Cooked king prawns
  • Sauce

Serve and garnish with peanuts, red chilli and fresh coriander.
